Banana Pancakes
This simple 4-ingredient banana pancake recipe is delicious and gluten free! A healthy breakfast or snack during pregnancy or enjoy postpartum - also great for baby when they start on food.

- 3 Bananas Ripe is best
- 4 Eggs
- 1/4 tsp Baking Powder
- 1 tsp Cinnamon Optional - omit if you don't like
Crack eggs into a medium mixing bowl, and add in baking powder and cinnamon (optional). Then whisk to combine.
Add 3 bananas into another bowl and lightly mash with a fork or potato masher. Don't mash too much, leave some larger pieces of banana for fluffy pancakes.
Pour egg mixture into the mashed bananas. Stir to combine.
Cook pancakes over medium-low heat on a griddle or frying pan. When you see small bubbles forming, flip the pancake over and cook for about one minute longer. Serve hot with syrup, honey or just enjoy plain!
