Banana Pancakes

This simple 4-ingredient banana pancake recipe is delicious and gluten free! A healthy breakfast or snack during pregnancy or enjoy postpartum - also great for baby when they start on food.

Ingredients

  • 3 Bananas Ripe is best
  • 4 Eggs
  • 1/4 tsp Baking Powder
  • 1 tsp Cinnamon Optional - omit if you don't like

Instructions

  • Crack eggs into a medium mixing bowl, and add in baking powder and cinnamon (optional). Then whisk to combine.
  • Add 3 bananas into another bowl and lightly mash with a fork or potato masher. Don't mash too much, leave some larger pieces of banana for fluffy pancakes.
  • Pour egg mixture into the mashed bananas. Stir to combine.
  • Cook pancakes over medium-low heat on a griddle or frying pan. When you see small bubbles forming, flip the pancake over and cook for about one minute longer. Serve hot with syrup, honey or just enjoy plain!
